Instructions:

For the banana bread casserole, lightly toast slices of toast and cut diagonally twice. Cut onions into small pieces, peppers into strips and bananas into slices.

Sauté onions in hot olive oil until translucent, add peppers and chili and saute. Sauté banana slices briefly as well.

Preheat oven to 200°C top and bottom heat. Mix eggs, sour cream and cream with the spices. Brush a baking dish with olive oil and cover the bottom with bread slices. Spread some glaze on top and some of the vegetables.

Cover with bread slices and again spread glaze and vegetables. Finally cover with bread slices, pour remaining glaze on top and cover with grated cheese. Bake for 20-30 minutes until cheese is brown and crisp.

Let rest for another 10 minutes and then serve the banana bread casserole.

Preparation Tip:

Instead of bananas, you can use pears or apples.
