Cut lemon (unsprayed!) into small slices.

Pour all ingredients into a large container.

Stir so that the sugar melts.

Cover the container with a dishcloth and put it in the window in the sun. Leave to ferment for at least one day.

Filter it through a dish and pour it into fizzy bottles.

If you use cork bottles, the stubble must be tied tightly.

Keep it cooled in the cellar, where fermentation takes place.

Drink on hot days like young wine.

Consume within two to three weeks, after which the elderberry sparkling wine is fully fermented and quite sour.

Tip: Always use organic lemons for cooking, if possible!
