Instructions:

Bring a large pot of salted water to a boil and cook the pasta in it until al dente.

Wash the cherry tomatoes and then cut them in half. Coarsely grate the carrots and set aside. Finely dice the shallots and garlic.

Heat a spacious frying pan or pot. Heat some Monini CLASSICO olive oil in it. Fry the garlic and shallots a little all around. Add the carrots and fry them. Stir in the thyme, sugar and tomato paste and season with the paprika powder. Add the cherry tomatoes and sauté for about 2-3 minutes.

Add a sip of pasta water and bring to a boil once. Simmer for about 3-4 minutes, add the balsamic vinegar and season with salt and pepper.

Put the pasta directly into the finished sauce.

Arrange the pasta in deep plates, spread the dolce latte on top and serve garnished with chopped, roasted pumpkin seeds.
