Instructions:

For the pork lung roast, season the meat with salt, pepper and rosemary and sear quickly on both sides in olive oil. Place in a baking dish.

Boil potato, peel and mash with a fork, mix with softened butter, yolk and the spices. Spoon onto the meat and bake in the oven at 200 °C for about 10 minutes.

Remove the meat from the baking dish and place it on a plate. Loosen the cooking residue with a little soup and add it to the meat.
