Instructions:

For the spelt rice dumplings with vegetables, steam the spelt rice in the vegetable soup for about 30 minutes, depending on the variety.The vegetables peel half of the zucchini and half of the carrots lengthwise into thin strips with a peeler and put them in an unperforated container.

Grate the remaining zucchini and carrots with a coarse grater. Peel and finely chop the shallots and garlic. Mix with the cooked spelt, eggs, grated zucchini, carrots, spelt crumbs and spelt flour. Season with salt and pepper and let the dough rest for a while.

Then form dumplings or loafs from this mass and steam at 100°C for 20 minutes. For the last 2 minutes, steam the zucchini and carrot strips in a perforated steamer insert. In the meantime, mix the fresh goat cheese with water, herbs, salt and pepper to make a creamy dip.
