Peel the beet and cut into small cubes.
Mix with the gin in a well-sealed container and leave to infuse in the refrigerator for about 1 week.
Put a few ice cubes in a tall glass, empty 2-4 ml of beet gin on top and top with the tonic water.
Garnish the beet gin and tonic with fresh beet leaves.
Preparation Tip:
Add a sugar rim to the glass and the drink is perfect.
