For the apple compote, peel the apples, remove the core and chop into cubes. Put the apples in a saucepan with the apple juice, elderflower syrup, raisins, juice of one lemon, cinnamon stick and cloves and bring to the boil.
Simmer on low heat for 5 minutes, the apples should remain firm to the bite.
Dissolve cornstarch with 2 tablespoons apple juice and thicken the apple compote a bit with it. Remove spices, let cool and serve.
