In a saucepan melt the butter, add the flour all at once and make hearty. Gradually add the milk and whipping cream and make 5 to 10 minutes, stirring extensively so that the amount does not stick to the bottom of the pot. Season with salt, pepper and nutmeg.

Slowly mix the egg yolks into the hot mixture. Add the grated hard cheese. Whip the egg whites into stiff peaks and fold them into the cooled soufflé mixture.

Butter the soufflé dish and pour the mixture into it to a height of 2/3. Bring water to the boil in a frying pan or possibly a large gratin dish. Place the dishes in the water bath. Bake in the oven at 200-240 °C (upper-lower heat) for 20-40 minutes, depending on the size.
