Mix some orange juice with the pudding powder until smooth. Bring the remaining orange juice and sugar to the boil, thicken with the pudding powder and bring to the boil briefly.

Empty into a mixing bowl, add the powdered sugar, whisk and stir the coconut fat into the warm base mixture piece by piece. (The heat will cause it to dissolve and you can then whip the mixture until very fluffy).

Refine with Cointreau or Grand Manier (orange liqueur).
