Instructions:

First, cook the pasta in enough salted water until al dente and then drain.

Peel and chop the onion and garlic.

Heat a little olive oil in a pot and sauté the onion cubes in it. Add the garlic and the pine nuts.

Then add the vegetables and tomatoes and simmer for a few minutes.

Puree and add a little olive oil if needed (if you prefer chunks, you can leave the pasta sauce un pureed). Season to taste with salt and pepper and stir in the Parmesan.

Arrange the pasta with the vegetable sugo and serve sprinkled with parmesan and basil.

Preparation Tip:

The sugo can of course also be prepared with fresh vegetables. This may need to be simmered a little longer until soft.
