For the spelt and herb baguette, first prepare the yeast dough. For the yeast dough, put the whole spelt flour in a mixing bowl.

Mix the lukewarm water with the yeast, herb salt, sugar and olive oil. Then pour it to the flour and let everything knead well with a dough hook (about 5 minutes).

Cover and let rise in a warm place for about 30 minutes. Make the herb filling: Roast the pumpkin seeds in a pan without fat for a few minutes.

Finely dice the garlic and chop the oregano. After the pumpkin seeds have cooled a bit, chop them a bit smaller. Then mix well with Parmesan, parsley, oregano and garlic in a bowl.

Preheat the oven to about 220 °C (top/bottom heat). Knead the yeast dough again vigorously and roll out the dough on a floured work surface to a rectangle of about 25×35 cm.

Set aside two tablespoons of the filling. Then sprinkle the filling evenly over the dough. Roll up tightly from the long side and place with the bottom seam on a baking sheet with baking paper.

Cut the roll diagonally about 6 times and brush with water. Now spread the set aside filling on the roll and press it a little bit. The roll should now have another 15 minutes to rise a bit more.
